Ingredients

blueberries
fresh or frozen
1/2
lemon
peeled and diced
1/2
tsp
grated ginger

beet
sliced
Instructions
Combine the ingredients in a blender.
Blend until smooth.
Strain through 4 layers of cheesecloth to remove pulp.
Preserve pulp for compost or other recipes.
Divide into two servings. Best served immediately!
Notes
This recipe tends to thicken when chilled for long periods of time. Consume immediately after preparation for a smooth texture.
