  • 1 blender
  • 4 layers cheesecloth

Ingredients
  

  • 1 cup blueberries fresh or frozen
  • 1/2 lemon peeled and diced
  • 1/2 tsp grated ginger
  • 1 beet sliced

Instructions
 

  • Combine the ingredients in a blender.
  • Blend until smooth.
  • Strain through 4 layers of cheesecloth to remove pulp.
  • Preserve pulp for compost or other recipes.
  • Divide into two servings. Best served immediately!

Notes

This recipe tends to thicken when chilled for long periods of time. Consume immediately after preparation for a smooth texture.
